Bird Nest with Rock Sugar
Ingredients:
1 ounce refined bird’s nest
1/2 cup rock sugar
Preparation:
- Cover the bird’s nest with one quart of luke-warm water and let it stand for one to two hours until the bird’s nest is fully expanded. Then drain off the water.
- Place the bird’s nest in a covered porcelain bowl and add one quart of water and steam it for one and a half hours.
- Add the rock sugar and steam for ten more minutes. Serve hot or cold but do not use ice cubes to cool it.
